Corn Tortillas


The corn tortilla is a staple item in the art of Mexican food. The diet of Mexico’s ancestors was purely native, and nutrition was based upon corn.

Although corn tortillas are principally all “die-cut,” they are made from a variety of corn types. Corn flour and cooked corn are the two primary methods. Corn tortillas vary widely in thickness, moisture content and texture.

Corn Products Processing
Flour - Corn flour means that these corn tortillas are produced from a pre-ground corn flour. The corn flour is very fine which tends to create a finished product that is mild and smooth in flavor and texture. Corn flour is available in a wide variety of styles and specifications, all of which can play a significant role in the final result of the product. They perform very well for rolling enchiladas and for use as “table bread.”

Cooked - Cooked corn tortillas are manufactured using whole kernel corn ground down on site. Large circular grinding stones are carved and used to grind the kernels. The finished result is a grainier product with a coarse texture. They are very authentic in appearance and taste. These tortillas perform very well for deep fried applications like tacos, tostadas and chips.

Storage and Handling Procedures

Preparation:

  • Frozen tortillas must be thawed properly before use.
  • For best results, refrigerate for 24 to 48 hours prior to preparation. Allow product to reach room temperature in a sealed bag for 2 to 4 hours before use.

Storage:

  • To keep tortillas pliable and fresh, product should be enclosed in plastic bags at all times.
  • Tortillas should be stored flat to prevent bent, broken or ragged edges.
  • Proper planning and rotation will ensure excellent flexibility and performance.
  • During the thawing process, moisture may appear in the bag. Avoid using the product until most of the condensation disappears and is absorbed back into the product.

Shelf Life:

  • Frozen: 180 days, refrigerated: 60 days, ambient: 20-30 days
