Ready-To-Fry Chips


Pre-cut corn is a value-added product that eliminates prep work in the kitchen. When fried on site as chips or strips, the result is a fresh and delicious product that can’t be matched in a pre-fried corn chip.

Pre-cut chips are defined by their “cut,” ie: 1/2-cut or 4-cut. The larger the “cut,” the smaller the chip size. Pre-cut corn is available in a variety of “cuts,” colors and corn types.

Besides the great taste of freshly prepared corn chips, our pre-cut corn products are cost effective to the operator and also reduce the risk of injury for those cutting their own corn tortillas on site.

Stack 25 lbs → Half and 4 quarter cut

When it comes to chips, the type of corn flour used affects the final product. Corn masa produces a smoother and often milder taste and texture than that of cooked corn. Cooked corn pre-cut chips are often said to have a more “authentic” appearance and taste.

The differentiating factor in the finished chip (after frying) lies in what is called the “bite” of the corn chip. This refers to the way in which the chip “snaps” or crunches when eaten. Corn masa chips are often said to have a sharper “bite.”

Storage and Handling Procedures

Storage:

  • Pre-cut corn tortillas can be stored frozen, refrigerated or ambient.
  • They must not be subjected to a freeze – thaw – refreeze cycle.

Preparation:

  • Frozen pre-cut corn tortillas must be thawed properly before use. For best results, product should be brought to room temperature at least 24 hours prior to use.
  • From any state, all pre-cuts must reach room temperature before frying.

Separation:

  • Once at room temperature, for bulk packed pre-cuts “fluff” the product by reaching in the case, pulling up and allowing the pre-cuts to fall back into the case. For stacked pre-cuts, remove one stack, fluff, and place in fryer.

Frying:

  • For best results, fryer temperature must be at least 350 degrees F. Fill fryer basket 1/3 full. Gently agitate the chips while frying for 30 to 45 seconds. Frying oil must be changed according to operator quality protocols.
  • Note: Never fry pre-cuts directly from a frozen state.

Shelf Life:

  • Frozen: 180 days, refrigerated: 60 days, ambient: 20-30 days
